Amlechi Uddamethi Recipe: A Perfect Dish to Try this Summer
Summer is here and everyone is just going crazy over the heat wave that has struck the country lately. Everyone is cursing the sun like anything but a few years back it was not the same. The advent of summer season meant loads of fun at granny’s place, so many games and a big basket of fruits, especially mangoes?. There used to be so many varieties and we even loved the unripe ones. While most of us have got busy in our day-to-day routine all that fun has lost somewhere.
So today we are here with something that you would definitely want to taste right away. We are going to mention Amlechi Uddamethi recipe aka raw mango curry which is a Goan dish. The term “Uddamethi” has been derived from a combination of Urad and methi. You might have tried out various mango recipes in summer but this one is a little different. It’s rich in a wide variety of flavours.
It has got a tangy taste because of the raw mango and tamarind but at the same time it’s also sweet due to the presence of jaggery. Then comes the spicy twist of chilly and pepper followed by a pinch of bitterness from methi seeds. That’s not all, it also has taste of coconut. Yummy!? Although you can have it with chapatis, it would make a perfect meal accompanied by some rice ?and papad by the side.

So now that you know what kind of dish it is let’s get started with the preparations. It’s a traditional mango curry from all the way to Goa and takes around 25 minutes to be prepared and cooked.
Meal: Main Course
Cuisine: Indian
Serves: 3 bowls
Ingredients
- Raw Mango: 3/4 cup
- Grated Coconut: 3/4 cup
- Tamarind: 1-inch ball
- Red Chillies: 2-3
- Pepper Corns: 1/2 tablespoon
- Jaggery: 1-2 tablespoon
- Turmeric: 1/4 tablespoon
- Mustard Seeds: 1 tablespoon
- Methi Seeds: 1/3 tablespoon
- Urad Dal: 1 tablespoon
- Asafoetida (Hing): 1/8 tablespoon
- Oil: 1 tablespoon
- Salt: as per the taste
Instructions:
(for coconut paste)
- Take the coconut and add pepper, tamarind, red chillies along with some water.
- Grind it and set it aside.
(for Amlechi Uddamethi)
- Heat some oil in a heavy bottomed vessel.
- Add some mustard seeds to the oil and let them splutter.
- Add the urad dal and fry it till it turns light brown.
- Put some methi seeds in it and stir fry until the color changes.
- Add turmeric and asafoetida and mix it properly.
- Add the pieces of raw mango followed by half cup of water.
- Cover it and allow it to cook till the pieces turn translucent.
- Then add the coconut paste that you have already prepared.
- Add salt and 3/4 cup of water.
- Mix it well.
- Add jaggery to it and allow the dish to simmer for some time.
- Turn off the stove/gas and give it a while to rest.
- Serve hot with rice and papad by the side.
