Required Ingredients
- 12 ounces wide Egg Noodles
- 2 tbsp of Olive Oil
- 1 pound boneless, skinless Chicken Thighs (Cut into 1-inch chunks)
- Kosher salt and freshly ground black pepper according to taste
- 3 cloves of Garlic (Minced)
- 1 Onion (Diced)
- 3 Carrots (Peeled and Diced)
- 2 stalks of Celery (Diced)
- 1/4 tsp dried Thyme
- 1/4 cup freshly grated Parmesan
- 2 tbsp freshly Parsley Leaves (chopped)
For the Sauce
- 3 tbsp of unsalted Butter
- 3 cloves of Garlic (Minced)
- 1/2 cup of All-Purpose flour
- 2 cups of Chicken Stock
- 1/2 tsp of dried Thyme
- 1/2 tsp of dried Parsley
- 1/4 tsp of Onion Powder
- Kosher salt and freshly ground black pepper according to taste
Method
- To prepare the sauce, melt butter in a large saucepan. Now, add garlic and cook, stirring frequently, until aroma comes.
- Now add the flour and whisk it, till lightly brown. After that, add chicken stock, parsley, thyme and onion powder. Cook, stirring constantly, till the sauce has begun to thick.
- For seasoning, add salt and pepper. Keep it aside.
- Now, in a large pot of boiling salted water, cook egg noodles according to package instructions. Drain well.
- Heat 1 tbsp of olive oil in a large stockpot over the medium flame. For seasoning, add salt and pepper to the chicken.
- Now add these chicken chunks to the stockpot and cook, till golden.
- After that, add remaining 1 tbsp of oil in the stockpot. Add onion, garlic, carrots and celery. Cook and whisk occasionally, until tender. Put thyme and stir, till aroma comes.
- Add egg noodles, sauce and Parmesan and combine well properly.
- Chicken Noodle Pasta is ready to serve, garnish with parsley if you desired.
