Get the recipe of Coffee Ice with Chocolate covered Espresso:
Ingredients
- 2 cups of milk
- 1 and 1/4 cups of cream
- 4 tbsps cornstarch
- 2/3 cup of sugar
- 1/4 cup of coffee beans
- 3 tbsps cream cheese
- A little pinch of Kosher salt
- 1/4 cup chocolate covered espresso beans (finely chopped)
How to prepare it?
- Take out 2 cups of milk in a bowl and from it, put aside 2 tbsp milk in a small bowl.
- Now, blend the remaining milk with cream and sugar in a medium size saucepan.
- Heat the mixture over medium flame and stir it to dissolve the sugar.
- Crush the coffee beans finely and add them into the mixture.
- Cover it and let soak for 25 minutes.
- Now, filter out the finely crushed coffee beans from the mixture by using a sieve.
- Put the cornstarch in a reserved 2 tbsp of milk and mix it rapidly to create a slurry.
- Move out the slurry into the milk mixture and boil for around 1 minute. Stir it continuously until the mixture begins to thicken.
- Take another big bowl, and put cream cheese and a pinch of Kosher salt. Blend both the ingredients, till they combine properly.
- Now put this one into the hot milk mixture and move together, until they fully combined.
- Cover it and freeze in the refrigerator.
- In between this, chop the espresso beans, and place them in the freezer to chill.
- Once the milk mixture is completely gets chilled, pour into the ice cream mixture and process according to the instructions, which are written on the machine.
- After that, stir in the chopped espresso beans and transfer the ice-cream into an air-tight container.
- Freeze for at least 2 hours before serving.
