Bihar is well-known for its rich culture and heritage, which make it the most prominent place among the tourists. It’s famous for lots of things, especially for food, which is unique in its own way. The Biharis are very good in turning some of the ingredients into the mouth-watering dishes that are superb in taste.

Today, we are introducing one of the most popular dishes of Bihar that is “Litthi Chokha”. You can enjoy it with your lunch and dinner. Litti is similar to Baati in appearance, but there is a slight difference in both. So, here we are sharing with you the recipe of this delicious dish, cooked by using the most common ingredients that are available in your kitchen.

So, let’s start the prepartion of Litti Chokha:

Ingredients for Litti

To make a dough

  • 2 cups of wheat flour
  • ½ tsp ajwain
  • 2 tbsp of refined oil
  • ¾ tsp salt
  • 2 tbsp of ghee

For filling (Pitthi)

  • 1 cup of sattu
  • 4-5 cloves of garlic
  • 1 medium size onion
  • 1 peice ginger finely chopped
  • 2-3 green chilies
  • ½ cup of coriander leaves
  • ½ tsp kalonji
  • 1 tsp ajwain
  • 1 tbsp lemon juice
  • Salt according to taste

Ingredients for chokha

  • 2 medium size potatoes
  • 1 big rounded brinjal
  • 3 medium size tomatoes
  • 4-5 garlic cloves
  • 2-4 chopped green chilies
  • ½ piece of chopped ginger
  • 2 medium size onion
  • 1tbsp coriander
  • 1 tsp mustard oil
  • Salt according to taste

Procedure for Making Litti

  • Sieve the flour in a dough kneading plate, add ajwain and oil in it.
  • Knead the dough properly with water and cover it with a wet cloth and keep aside.
  • The dough is ready for Litti and now we’ll prepare its filling.
  • Mix all the filling ingredients with the sattu, and add water to prepare the stuffing moistly.
  • Now, make a round shape balls of dough, sprinkle some dry flour over it and then slightly press them by hands.
  • Stuff 2 spoons filling in the center of the patty and close it from all the sides.
  • Now, preheat oven to 200 F and put all the Littis on a baking tray and bake them till one side is brown or having a black spot on its one surface. Then turn over for baking from other sides. It will take a few minutes more.
  • Take out them, dip in the bowl of ghee.

Procedure for Chokha

Chokha

  • Boil the potatoes, tomatoes and remove the skin of them.
  • Roast the brinjal from both the sides until it becomes soft and roast the garlic cloves as well.
  • Peel the skin of brinjal.
  • Mash potatoes, brinjal, garlic cloves, and tomatoes together.
  • Add finely chopped onion, coriander leaves, grated ginger, salt, green chilies, and mustard oil.
  • Mix all the ingredients properly by hands.
  • Chokha is ready and serve it with hot Litti.
