Zayed Khan’s Red Mutton Masala Chops and Bangalori Dal
Ingredients for the Mutton Chops
- 1 kg Mutton Chops
- 2 tsp of Red Chili Powder
- 1/2 tsp Turmeric Powder
- 2 tsp of Ginger-Garlic Paste
- 1 Lemon
- Salt according to taste
Ingredients for the Bangalori Dal
- 2 Medium Tomatoes (chopped)
- 2 large onions (chopped)
- Fresh Coriander Leaves
- 4 to 5 Green Chilies
- ¼ Coconut (crushed)
- 1 tsp of Red Chili Powder
- ½ tsp of Coriander Powder
- ¼ Turmeric Powder
- ½ tsp of Fenugreek or Cumin Powder
- ½ cup of Tuwar Dal
- ½ cup of Masoor Dal
- 1 cup of Tamarind Water (imli)
- A few Curry Leaves
- A few cloves of Garlic
- 3 Red Chilies
- ½ tsp of Mustard Seeds
- A small pinch of Asafoetida (hing)
Procedure for the Mutton Masala
- To prepare Mutton Masala Chops, rinse them and add red chili powder, turmeric powder, ginger-garlic paste and salt.
- Let them marinate for half an hour.
- After that, cook them over the medium heat and add sufficient water to become soft.
- Once the Mutton chops are cooked completely, then heat the oil in a pan or a wok (kadai).
- Deep fry the chops, until, the color becomes deep red.
- Finally, squeeze the lemon juice over them and serve.
Procedure for the Bangalori Dal
- Fry the mixture of fenugreek or cumin powder along with Masoor dal and Tuwar dal on a hot griddle (tawa).
- Put them in a cooker and add chopped tomatoes, onions, fresh coriander leaves, green chilies, crushed coconut, red chili powder, dry coriander powder and turmeric powder.
- Boil them together in the pressure cooker, till the dal is cooked.
- After that, mash the Dal and create a paste without forming no lumps.
- Now, add tamarind water.
- Take a separate pan and do tadka of some curry leaves, cloves of garlic, red chilies, mustard seeds, asafoetida and sliced onions.
- Fried them properly for 1-2 minutes and immediately pour it into the dal mixture and cover it with the lid.
- Banglori dal is ready, serve hot.
