A Delicious and Easy Vegetarian Thukpa Recipe

Today, we are introducing Veg Thukpa Recipe that’s not only quick but can also be prepared at home. It’s a basically soup that is made by combining many ingredients such as vegetables, yogurt and many more. A hot bowl of Thukpa gives you the perfect happiness in the rainy and winter season.
This delectable soup, a popular one in Tibet that required a very few ingredients and consume less time for cooking. Many of you, have not heard the name of this dish before, as it’s not much famous in India. Therefore, we are bringing the recipe of this yummy soup, so that you can try it at home and surely, you and your family will relish by eating a new dish.
How to make Thukpa Vegetarian Noodle Soup:
Ingredients used in it
- 400 gm of noodles
- 200 gm mixed vegetables (cauliflower, carrots, green beans, mustard greens, potatoes)
- 200 gm spinach (finely chopped)
- 1 cup of onion (finely chopped)
- 1 tbsp garlic (finely chopped)
- 1 tbsp ginger (finely chopped)
- 1 tsp turmeric powder
- 1 tsp cumin powder
- ½ tsp lovage seeds (ajwain)
- 3 fresh chilies
- 1 bay leaf (tej patta)
- 1 cup of tomatoes
- ½ cup of curd (dahi)
- 2 tbsp soya sauce
- 2 cup vegetable broth
- 2 tbsp mustard oil
- Salt and pepper according to your taste
- 1 tbsp coriander leaves (finely chopped)
Method to prepare it
- Boil the salted water into a large bowl and add noodles in it.
- Boil the noodles, till slightly under cooked. And, after that drain and rinse them with a normal water.
- Heat the mustard oil in the sauce pan and finely chopped onion in it.
- Fry it, until turns to light brown.
- Add garlic, ginger, turmeric and cumin powder along with chilies.
- Mix them all for 1 minutes.
- Now, put all the mixed vegetables and fry them all properly for around 5 minutes.
- Add tomatoes, soya sauce, curd, broth, lovage seeds, bay leaf, salt and pepper into the mixture.
- Cook the mixture well, till the vegetables are soft.
- Now, add noodles and again cook for 5 minutes, so that the consistency of the sauce can be attained.
- Finally, add spinach and mix properly into the cooked noodles for 1 minute.
- Top with finely chopped coriander leaves and serve it hot.
