Serves: 4 servings
What are the ingredients you need?
- 1 cup of Pigeon Pea (arhar dal)
- ¾ cup of Sugar or Jaggery (gud)
- ½ tsp of Cardamom Powder (elaichi)
- 1/8 tsp of Nutmeg Powder (jaifal)
- 2 tbsp Ghee
- 1 cup + for dusting Wheat Flour
- 1 and ½ tbsp of Oil
- Water
How to prepare Puran (stuffing)?
- First of all, rinse the arhar dal and immerse it in water for around 30 minutes.
- Now, drain out the excess of water and pressure-cook it with 1 and ½ cups of water in the medium sized cooker for 3 whistles over the medium flame.
- After coming whistles, let the pressure down inside the cooker. Open the lid and drain out the excess of water.
- Uniformly mash the dal with the back of the spatula or you can use a masher to mash it.
- Now, heat a medium-sized heavy wok (kadai) on the medium flame and add cooked dal, sugar or jaggery, whatever you are using and ghee in it. Mix properly by using a ladder.
- Stir continuously and cook, till the mixture become thick.
- Now, if the mixture is thick enough, then switch off the flame, otherwise cook it for 3 to 4 minutes. You can check the thickness of Puran by placing spatula vertically straight in the center. If it does not fall, then the mixture is thick.
- After that, add cardamom powder, nutmeg powder and stir properly.
- Now, turn off the flame and let the mixture cool at room temperature. Divide the mixture into 10 equal portions.
How to prepare Puran Poli?
- Take wheat flour in a big bowl and add oil. Knead smooth dough with the help of water.
- After kneading the dough smoothly, cover it with the muslin cloth and let it set for around 15 minutes.
- After 15 minutes, knead it again and divide it into 10 equal portions.
- Take out a portion and give it a shape like a ball and press a bit with your palms.
- Coat it with dry flour and roll out it with the rolling pin.
- Now, place one Puran in the centre of rolled Puri.
- Wrap the stuffing with all sides of Puri and seal the top, where all sides merge.
- Give it a round shaped ball and then press stuffed ball a bit.
- Coat with dry flour and again roll out it with the rolling pin.
- Heat the griddle (Tawa) over the medium flame and place raw Puran Poli over it.
- Cook it, till the golden brown spots appear on the bottom side. Flip it and cook another side.
- Transfer it to a plate and spread ghee as much you like. Repeat the same procedure for a remaining portion of dough and stuffing.
- Puran Poli is ready, serve it immediately and enjoy.
