Recipe of Healthy Roasted Beet Hummus Sandwich:
Serves:8
What will you need?
- 2 Beets
- 2 Garlic Cloves
- 1 inch of Ginger
- 3 tbsp of Tahini (an oily paste made from toasted ground sesame seeds)
- ½ tsp of Lime Juice
- ½ Lime Zest
- ½ cup of Olive Oil
- 15 ounces or 0.425 kg Chickpeas (kabuli chane)
- ½ tsp Salt of according to taste
- ¼ tsp Red Chilli Powder
- ¼ tsp of Cumin Seeds
- English Muffins
- 2 Avocado (type of naashpati)
- Micro-greens for garnishing (optional)
What to do?
- First of all, preheat the oven at around 375°F.
- Cover the beats with the help of aluminium foil and place them on the baking sheet.
- Roast the beets for around 45-50 minutes.
- After that, take out the baking sheet and lets the beets cool. Peel them.
- If the skin does not remove easily, again roast them in the oven for a bit longer.
- Now, add the beets, ginger, garlic, lime juice, lime zest and chickpeas to the food processor.
- Vibrate the food processor until chopped.
- Take out the bowl, and then add the tahini, process until finely pureed.
- After that, add olive oil and again process, till smooth.
- Add red chilli powder and salt. Stir well.
- Now, toast the English muffins and spread roasted beet hummus over it and garnish with avocado and microgreens.
- Roasted Beet Hummus Sandwich is ready.
